Moist Chocolate Cupcakes

Ingredients:
* 3/4 c + 2tbsp All-Purpose Flour
* 3/4 tsp Baking Powder
* 3/4 tsp Baking Soda
* 1/4 c + 2 tbsp Cocoa Powder
* 1/2 c Sugar
* Pinch of Salt
*1 pc Egg
* 1/2 c Evaporated Milk
* 1/4 c Oil
* 1/2 tsp Vanilla Extract
* 1/2 c Hot Water

Procedure:
1. Mix all the sifted dry ingredients. Set aside.
2. In another mixing bowl, combine all the wet ingredients except the hot water.
3. Make a well at the center. Add the wet mixture unto the dry ingredients gradually.
4. Mix until smooth or no lumps visible.
5. Add the hot water and mix until well blended. Do not over-mix.
6. Put the batter on the prepared cup liners.
7. Bake at pre-heated oven for 15-20 minutes (140-160 C).
8. It's done when the inserted toothpick comes out clean.

LEMON TRUFFLES

Ingredients:

* 1 cup white chocolate chips
* 2 tablespoons unsalted butter
* 1/4 cup heavy cream
* Zest of 2 lemons
* 2 tablespoons fresh lemon juice
* 2 cups powdered sugar
* Yellow food coloring (optional)
* Lemon zest or yellow sprinkles for decoration (optional)

Instructions:

1. In a heatproof bowl, combine the white chocolate chips and butter.

2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and butter mixture. Let it sit for a minute to melt the chocolate, and then stir until smooth.

3. Add the lemon zest and lemon juice to the chocolate mixture, stirring well.

4. Gradually add the powdered sugar, stirring continuously, until the mixture is smooth and well combined. If you want a more vibrant yellow color, you can add a few drops of yellow food coloring.

5. Refrigerate the mixture for about 2 hours or until it’s firm enough to handle.

6. Once the mixture is firm, use your hands to roll small portions into truffle-sized balls. If the mixture is too sticky, you can dust your hands with powdered sugar.

7. Optional: Roll the truffles in additional lemon zest or yellow sprinkles for a decorative touch.

8. Refrigerate the truffles for at least 30 minutes before serving.

BUTTER CAKE RECIPE

🌟 INGREDIENTS

◾️2 large eggs
◾️125 grams of flour
◾️125 grams of sugar
◾️½ cup of vegetable butter
◾️½ cup of milk
◾️1 tablespoon vanilla or orange essence
◾️1 tablespoon baking powder
◾️½ teaspoon of salt

🌟 PREPARATION

◾️Preheat the oven to 180°c and place the paper cups in the shortbread mold.

◾️In a container, place the flour and baking powder, then reserve it.

◾️In another container, beat the sugar and the eggs until all the sugar has completely dissolved.

◾️Proceed to add the milk, the vanilla/orange zest and thoroughly mix together.

◾️Add oil gradually and slowly, while you mix until you achieve a uniform and homogeneous mixture.

◾️To this mixture, add the flour mixture along with ½ teaspoon of salt.

Keep mixing, but not as much

◾️Then let it rest for about 15 minutes.

◾️Pour the batter to the mold that you already have ready.

◾️Bake for 20 minutes in the oven.

◾️Let them cool for a couple of minutes and they are ready to be eaten.
