There’s so much to be grateful for this year, and we’re wrapping it up with a Christmas celebration you won’t want to miss. I really wanted to make it to this year. I had so many ideas, but it just wasn’t feasible for me to physically be there. Thankfully, a friend from offered to take some boxes for us. 🧡

I chose to experiment with Tablea Brownies with muscovado sugar and Kape Brownies.

I tried to be efficient with making these that I ended up botching the first 4 batches of Kape Brownies. Then I remembered that the whole point of this is to slow down and enjoy the process with intention, so slow down I did. I was so intrigued with how the Tablea Muscovado would taste like as I know raw cocoa powder is seldom chosen over alkalized Dutch-processed cocoa because of its acidity. I did learn that using pure tablea coins had a higher fat content than cocoa powder and that would make for a fudgier brownie. So I tried it. I’ll be honest, I wasn’t convinced they’d turn out as expected at first and had internal panic of “did I just botch a recipe again?” It was acidic and bitter and just not the most pleasant flavor, but it was too late to start a new batch, so I decided to call it a day and see how it goes the next day. Sure enough, the flavors had more time to develop and it turned out very rich, dark and delicious. It’s still not your typical brownie, but it does taste deep, earthy and rustic and like you’re having a lovely picnic at a lovely field.
