COOOOKIES

Do you LOVE cookies? Because I REALLY love cookies. And there’s no better cookies than the ones you freshly bake at home - that smell 😍 am I right?! Of course I’m right!

The dough is exactly the same one I use in my cookies, so you can make all the cookies or cookie pies or both!

The recipe for my Belgium Biscuit dough is in the book and here is the delish but ever so simple recipe for my raspberry icing.

Keto Raspberry Icing

Makes enough to cover approx 40 standard or 20 large cookies

1.5 cups powdered sweetener (I use nothing naughty)
1.25 tablespoons freeze dried raspberry powder
1/4 to 1/3 cup of boiling water

Add boiling water slowly to your dry ingredients and mix until you reach a thick, icing consistency.

You want to be able to scoop a heaped teaspoon, have it spread easily but not run off the sides of your cookie πŸͺ

OK chocolate lovers, if you’re looking for something utterly delicious and feels a little bit decadent then look no further πŸ‘€ πŸ›‘

Recipe

Need: 8inch springform pan lined

250g butter
250g dark chocolate (I use 90%)
1.5 cups allulose or granulated sweetener of choice (any blend from the supermarket with a 1:1 sugar use ratio is good)
7 eggs
2 teaspoons vanilla essence
1 teaspoon almond essence

Do this

🍫In 30 second bursts in the microwave, heat your butter and chocolate together until almost completely melted

🍫Add your sweetener and stir well until sweetener is dissolved and mixture is smooth

πŸ₯š In a separate bowl whisk together your eggs and essences then add 1/4 at a time into the chocolate mixture, whisking each time to incorporate the egg fully before adding more

πŸ₯šπŸ«Once all the egg is added whisk gently until the mixture becomes beautifully thick and glossy

❀️ Pour mixture into your tin and fan bake at 180 for 25-30minutes or until the edges are set and the centre is still slightly jiggly

❀️ Set aside to cool for at least 10 minutes before releasing the springform pan and peeling away the liner from the edges

❀️ Wait as long as humanly possible before devouring with your favourite creamy side or tangy berries to balance out the richness of the torte πŸ“πŸ« Give it a dusting in powdered sweetener for that extra fancy look 🀌🏼

Makes 12-16 serves because a little bit goes a long way!
