Chinese Egg Cake

Ingredients
• 4 large eggs
• 3/4 cup granulated sugar — 150g
• 1 cup cake flour — 125g
• 1/4 cup milk — 60ml
• 1/4 cup vegetable oil or melted butter — 60ml
• 1 tsp vanilla extract
• 1/2 tsp baking powder
• Pinch of salt

INSTRUCTIONS

Preheat oven to 170°C. Grease and line an 8-inch round pan or loaf pan.

In a large bowl, beat eggs and sugar together for 6–8 minutes until pale, thick, and fluffy.

Warm the milk slightly and mix with oil and vanilla extract.

Sift together cake flour, baking powder, and salt.

Fold the dry ingredients gently into the egg mixture in batches.

Add the milk mixture gradually and fold carefully to avoid deflating the batter.

Pour batter into the prepared pan and tap lightly to remove air bubbles.

Bake for 25–30 minutes or until golden brown and a toothpick inserted comes out clean.

Allow the cake cool slightly before removing from the pan.

Serve warm or chilled.

SUPER SOFT CROISSANTS

🌟 INGREDIENTS

◾️100ml (3.4 fl.oz) warm water
◾️100g (3.4 oz) flour
◾️18g (0.6 oz) sugar
◾️10g (0.3 oz) fresh yeast
◾️500g (1 pound) flour
◾️100g (3.4 oz) sugar
◾️70g (2.3 oz) butter, melted
◾️½ cup warm milk
◾️1 egg
◾️1 egg white
◾️Room temperature butter for layering.

🌟 PROCEDURE

◾️Dissolve sugar and crumbled yeast in warm water.

◾️Add flour and stir to form a sticky dough.

◾️Set aside for 10 minutes.

◾️Whisk sugar, with butter, egg and an egg white.

◾️Add yeast paste and leftover flour.

◾️Knead until smooth dough forms.

◾️Set the dough aside for 1hour.

◾️Roll out the dough to form a rectangle.

◾️Cut it into 5-6 strips and brush each one with room temperature butter.

◾️Layer strips on top of one another and re-roll into a rectangle again.

◾️Slice into triangles and roll croissants as shown above.

◾️Set aside in warmth for at least 30 minutes or until doubled in size.

◾️Brush with egg wash and bake at 180°c/350F for 20 minutes.

Vanilla Muffins

Ingredients
• 2 cups flour
• 1/2 cup sugar
• 2 tsp baking powder
• 1/2 tsp salt
• 1 cup milk
• 1/3 cup oil or melted butter
• 1 egg
• 1 tbsp vanilla extract

Method
1. Mix flour, sugar, baking powder, and salt.
2. In another bowl, whisk milk, oil, egg, and vanilla.
3. Combine wet and dry ingredients until just mixed.
4. Fill muffin cups 3/4 full.
5. Bake at 180°C (350°F) for 18–20 minutes.

◾️¼ cup powder milk
◾️1tbsp of cornflour
◾️1tsp of baking powder
◾️1 tbsp of custard powder
◾️4 cups of flour

🌟 INSTRUCTIONS

◾️Preheat your oven at 180°c.

◾️In a big bowl cream margarine and icing sugar

◾️Add cooking oil, cremora, cornflour, baking powder and custard powder then combine everything.

◾️Add a cup of flour one at the time and mix everything together.

◾️Roll your dough flat to desired thickness.

◾️Cut with your desired cutters.

(Dip your cutter in a flour as you cut to stop them from sticking to your dough.)

◾️Bake till golden brown.
