Stripped of excess, we return to the depth of flavor. Our Aged Duck brings a rich, time-deepened intensity, paired with a Smoked Jus that carries the haunting aroma of embers. Grounding the dish is a comforting local touch Bergedil ignited by the subtle, fiery spark of Curry Powder.

After making our rice wine, the fermented rice is left behind.
It still carries sweetness, aroma, and plenty of flavour.
We turn it into an ice cream, finished with a light oolong cream.

Along the way, landscapes change. So do the ingredients.
What appears on the plate is a reflection of these connections between land and ocean, between cultivation and foraging, between people and the environment that sustains them.
Air·Flow is an exploration of those relationships, told through the ingredients that pass through them.
