Cognac - ဘုန်းကြီး Brandy

အဲ့တော့ Cognac ဆိုတာဘာလဲမစခင် Brandy အကြောင်းစပြောပါမယ်။

Brandy ဆိုတာ Distilled Wine ပါ။ Brandy ဆိုတဲ့နာမည်က Dutch စာလုံး Brandewijn ကဆင်းသက်လာတာပါ။ Brandewijn ဆိုတာ Burnt Wine လို့အဓိပ္ပာယ်ရပါတယ်။ အဲ့ကနေမှ Brandywine၊ ပြီးမှ Brandy လို့ဖြစ်လာတာပါ။

Brandy လုပ်တဲ့နေရာမှာ Fruit juice တွေကို Fermentation နည်းလမ်းနဲ့ Wine ချက်သလိုမျိုးအရင်လုပ်ရပါတယ်။ Fruit ဆိုတဲ့နေရာမှာ အများဆုံးသုံးတာက စပျစ် (Grapes) ပါ။ တခြား apple, pears, etc. စတာတွေလည်းသုံးကြပါတယ်။ အဲ့လို Fruit Juice ကနေ Wine (white wine) ရအောင်လုပ်ပြီးပြီဆိုရင် Distillation နည်းလမ်းနဲ့ New Born Brandy ရအောင်ထပ်လုပ်ရပါတယ်။ အဲ့တာကြောင့် Distilled Wine / Burnt Wine လို့ပြောတာပါ။ ပြီးမှ လိုချင်တဲ့ Aging အလိုက် Brandy ကို ဆက်ထားရပါတယ်။

ဒီနေရာမှာ Brandy နဲ့ Whisky အဓိကကွာတာလေးပြောချင်ပါတယ်။ ကွာတာက Brandy ကို အပေါ်မှာပြောခဲ့သလို Fermented Fruit တွေကလုပ်ပြီး Whisky ကိုက Fermented Grain တွေကလုပ်တာပါ။ ( Grain ဆိုတာ corn, barley, rye, wheat, etc. ကိုပြောတာပါ။ Whisky အကြောင်း post သပ်သပ်တင်မှ သေချာရှင်းပြပါမယ်) ပြီးတော့ Whisky ကိုရေခဲနဲ့သောက်ကြတာများပေမယ့် Brandy ကိုတော့ ရေခဲမပါ/မအေးပဲ သောက်ကြပါတယ်။ (တချို့ဆို ထည့်မည့် glass ခွက်ကို နွေးအောင်အပူပေးပြီးမှ brandy လောင်းထည့်ပြီးတောင် သောက်ကြပါတယ်။ Brandy ရဲ့ aroma ပိုပေါ်လွင်အောင်ပါ)

အဲ့တော့ Cognac ဆိုတာ Brandy အမျိုးအစားတစ်ခုပါ။ ထပ်ပြောရရင် Brandy ထဲမှာမှ ရောင်းအားအကောင်းဆုံး လူကြိုက်အများဆုံး Brandy ပါ။ Brandy လိုင်းအောက်ကနေ Cognac ဆိုပြီး လိုင်းတစ်လိုင်းကွဲထွက်လာရလောက်အောင်ကို အောင်မြင်တာပါ။ ပြီးတော့ Brandy နဲ့ မတူတာလေးတွေလဲရှိပါတယ်။

အဓိကမတူတာက Brandy ကို Fruits (grapes, apple, pears, etc.) တွေကနေလုပ်ပေမယ့် Cognac ကိုတော့ White Grape Varieties ကနေပဲ လုပ်လို့ရပါတယ်။ ပြီးတော့ Brandy ကို တစ်ကမ္ဘာလုံးမှာထုတ်လို့ရပေမယ့် Cognac ကိုတော့ ပြင်သစ် (Cognac area of France) မှာပဲထုတ်ပါတယ်။ Cognac ကစည်းကမ်းပိုများပါတယ်။ Cognac ရဲ့ Distillation Process မှာလည်း Specific One Type နဲ့ပဲလုပ်ရပါတယ်။ ပုံမှာပြထားပါတယ်။ Double distillation, Pot still, Oak cask ပါ။ Copper pot နဲ့ပဲလုပ်ပါတယ်။

အဲ့တော့ Cognac က Brandy လားဆိုတဲ့မေးခွန်းက ရှင်းသွားပါပြီ။
အရမ်းအောင်မြင်ပြီး Cognac လိုင်းတစ်လိုင်းပေါ်နေပေမယ့် Cognac က Brandy ပါပဲ။
