Miso Glazed Black Cod🐟

:
1/2 cup white or yellow miso
1/4 cup sake or mirin
1 tablespoon soy sauce (optional)
1 tablespoon wasabi (optional)
1/3 cup sugar
7 ounce or 200 g black cod fillets
Banana leaves and Ginger sticks for decoration

Boil over high heat sake/ mirin until reduced by half.
Return to low heat and cook miso, sugar, soy sauce, wasabi until thickened slightly 1 minute or so.
Brush both sides of the fish generously with the mixture.
Grill or broil until browned.
