You need:
– Guanciale (crispy, not burnt)
– Pasta (al dente, ovviamente)
– Pecorino Romano
– Freshly cracked black pepper

Polpette al sugo? Let’s simmer! 🍅🇮🇹
Polpette dough
500 g ground beef
200 g soaked bread
50 g Parmigiano Reggiano
50 g Pecorino Romano
5 g finely chopped parsley
1 egg yolk
1 whole egg
Nutmeg to taste
Salt and pepper to taste
Tomato sauce
400 g of blended peeled tomatoes
3 tbsp Extra virgin olive oil
2 cloves of garlic
1/2 chopped onion
Basil
Salt and pepper to taste
Mix your meatball magic.
Roll ‘em. Brown ‘em.
Then… into the sauce they go.
Let them simmer piano piano —
until the sugo hugs every bite.
Soft, saucy, molto romana.
Best served with bread to scoop it all up. 🥖
