Il mare incontra la terra con misura: un roastbeef di tonno sotto l'olio ai capperi, un carpaccio di manzo illuminato da nocciole e caviale, un rombo che riposa su cardoncelli e asparagi. I classici romani restano esattamente dove devono stare, lo spaghetti al pomodoro lasciato alla sua intelligenza, la vignarola intatta nella sua stagione.

Ogni portata si regge su un'idea di equilibrio, dove la materia prima viene prima di tutto e il resto si misura su di lei.

Experience a kitchen that lets Italy speak for itself. The menu signed by Fulvio Pierangelini follows the season as closely as it follows the tradition, never forcing either of them. Spring arrives through broad beans and peas, asparagus and wild strawberries, in pairings that look simple on the page and reveal their depth in the eating.

The sea meets the land with measure: a tuna roastbeef under caper oil, a beef carpaccio brightened by hazelnut and caviar, a turbot resting on cardoncelli and asparagus. Roman classics are kept exactly where they belong, the spaghetti al pomodoro left to its own intelligence, the vignarola intact in its season.

Each course rests on an idea of balance, where the ingredient comes first and everything else is measured against it.

Begin the evening high above the Spanish Steps, where Rome opens out in rooftops and domes. At Cielo, the cocktails of Once Upon a Time arrive with the gestures of a film set, a tribute to Cinecittà and its leading ladies.

The kitchen of Fulvio Pierangelini follows close behind, with plates that read simple on the menu and prove anything but, tied to the season and to the city.
