In the late 1700s, when Calcutta was the capital of the British Empire in India, Chinese immigrants, especially those who spoke Hakka, came to the city for work. They found employment in tanneries, ports, railways, and silk trading. These Chinese settlers embraced Indian customs and habits while still maintaining their own cultural identity. However, they missed the flavors of their homeland and wanted to satisfy their cravings for spicy fried food.

To adapt to their new surroundings, these Chinese immigrants started using local Indian ingredients and spices to recreate their favorite dishes. They began selling these fusion creations to fellow Chinese workers in Kolkata's Chinatowns, particularly in Tiretta Bazaar and Tangra. Over time, this unique blend of Chinese cooking techniques and Indian flavors became known as Indo Chinese or Indian Chinese cuisine. It's a delicious fusion that combines the best of both culinary worlds! 🍽️🌶️
