A food line can cook continuously and pack continuously. The step in between is where the flow tends to break.
After cooking or frying, the product comes off hot, often around 80°C, and cannot be packed until it cools down to 30-40°C. The usual answer is to spread it across trays or racks and wait, which costs floor space and time and quietly forces the whole operation back into batches. Cooling becomes the bottleneck that sets the pace for everything on either side of it.
