*Spaghetti Aglio Olio E Peperoncino*
Ingredients
• 1 cup boiled Spaghetti
• 2 tsp sliced garlic
• 2 tbsp extra virgin olive oil
• ½ tsp red chilli flakes
• 1 tbsp butter
• 2 tsp finely chopped parsley
• Salt as per taste
Method
• Take a cold pan, add olive oil. Now heat the pan and immediately add sliced garlic. This will ensure the olive oil infuses with maximum flavour and aroma of the garlic. Sauté well till it the garlic starts turning light brown. Add salt. Give it a mix.
• Add red chilli flakes and parsley. Mix well.
• Add some water, spaghetti and toss well.
• Add butter and some water and mix well. Butter will give a lovely glaze and shine to the Spaghetti. Ensure the spaghetti is nicely coated with the garlic infused extra virgin olive oil.
• Adjust the seasoning and turn off the heat.
• Drizzle some olive oil and parsley on top. Serve spaghetti AOP immediately.
Cheesy Chicken Salami with Mushroom Pesto Sandwich
Ingredients
• 2 slices white bread
• 4 slice of chicken salami
• ½ cup sliced button mushroom
• 2 slices of cheese
• 1 tbsp finely chopped parsley
• 1 tsp basil pesto
• ½ tsp garlic chop
• 1 tsp extra virgin olive oil
• 1 tsp butter
• Salt and black pepper as per taste
Method
• Heat a pan, add butter, toast the bread slices on one side only and keep aside.
• Now clean the pan and heat it again, add olive oil and sauté mushrooms well.
• When mushrooms are half done, add chopped garlic and saute well.
• Add salt and black pepper as per your taste. Mix well.
• Add chopped parsley and give it a stir. Keep this on aside.
• Now, take a toasted bread slice and apply basil pesto on the toasted side of the bread.
• Add slices of cheese, salami, mushroom and place some more salami and cheese slice on top.
• Cover it with bread slice. The toasted side which has pesto on it should be inside the sandwich.
• For the final step, take a pan, add some butter and toast the sandwich well on both the sides. Let it turn golden brown.
• Once done, slice it into two and serve your sandwich immediately.
