Yo Maami

I don't talk often enough about Yo Maami's vegan jaggery rolls. These rolls up there in the picture.

They're made with coconut milk. And coconut oil.

My sweetner of choice is jaggery mainly because it's centuries old, it's natural, the Indian body has synthesized this and is familiar with it.

When people ask me if I have sugar free options, this is what I offer.

You can't smell the coconut-iness. And you can't taste it either.

The coconut milk definitely adds something to the dough making it that much yummier.

And they photograph really well.

While rolls are what I like to do, sourdough is that fickle mistress, who is capricious.

She teases and taunts. Just when you feel that everything is under control, she leaves, making you realise that she and not you are in charge...

This sourdough bread came from what looked to me like a bread gone wrong I wasn't sure whether her structure would hold as a boule.
Whether she would collapse with inclusions. And so she became this gorgeous focaccia
