Weekly Recipe Folkstone

FISH PICKLE
Ingredients:

1. Fish pieces (Mackerels, King fish, Tuna) : 1 kg
2. Vinegar : 1 ½ cup
3. Turmeric powder : 1 tea spoon
4. Salt to taste
5. Red chillies : 20
6. Cumin : 1 table spoon
7. Mustard : 1 table spoon
8. Green chillies : 6
9. Ginger : 1’’
10. Garlic : 1 pod
11. Vegetable oil : 1 cup
12. Mustard : 1 tea spoon

Method:

Marinate fish with salt, vinegar and turmeric powder for ten minutes. Grind red chillies, cumin and mustard with diluted vinegar to a fine paste. Mince green chillies, ginger and garlic. Heat oil in a shallow pan and fry fish for either side till brown. Remove bones and skins. Heat oil in a pan, add mustard, minced masala and fry for five minutes. Add ground masala and fry till oil floats. Mix with fried fish. Add salt and vinegar if needed. Cool and store in an airtight bottle.

CHICKEN WINGS FRY

Ingredients:

1. Chicken wings : 10
2. Curds : ½ cup
3. Salt to taste
4. Garam masala powder : 1tea spoon
5. Chilli powder : 2 tea spoon
6. Turmeric powder : 1 tea spoon
7. Red colour powder : ½ tea spoon
8. Corn flour : 1 tablespoon
9. Oil : 2 cups
10. Coriander leaves : 1 bunch
11. Lemon slices : 4

Method:

Marinate wings with ingredients two to eight. Heat oil and deep fry wings till golden brown. Garnish with coriander leaves and lemon slices.
