They are the perfect way to elevate your idlis, dosas, or hot rice with ghee.
# # # The Universal Rule: General Method for All Podis
Before diving into the specific recipes, remember this simple 5-step process that applies to every single podi on this list:
**Roast the Base:** Dry roast the dals and seeds over low-medium heat until golden and aromatic.
**Roast the Aromatics:** Roast the chilies and curry leaves until completely crisp.
**Cool Down:** Let all the ingredients cool down to room temperature.
**Grind:** Blend everything into a coarse or fine powder, depending on how you like it.
**Store:** Keep your podi in an airtight container to lock in the freshness!
1. Idli Podi (The Classic)
Ingredients: 2 cups urad dal, 1 cup red chilies, 1/4 cup sesame seeds, 1 tsp hing, and a handful of curry leaves.
How to Make: Roast the urad dal until golden brown. Next, roast the chilies, sesame seeds, and curry leaves. Let it cool, toss in the hing, and grind.
Best Enjoyed: Mixed with sesame oil and served alongside soft, hot idlis!
2. Paruppu Podi (Lentil Powder)
Ingredients: 2 cups toor dal, 3/4 cup roasted gram, 1/4 cup pepper, 1 tbsp cumin, and dry red chilies.
How to Make: Dry roast the toor dal and peppercorns first. Toward the end, add the roasted gram, cumin, and red chilies to the pan. Let it cool and grind into a fine powder.

Ingredients: 2 cups curry leaves, 1/2 cup urad dal, 1 cup chana dal, 2 tbsp tamarind, and garlic cloves.
