As chocolate makers the one question you ask yourself VERY often in a market dominated by affordability, "Is this a foolish life choice?".
Most of our conversations over the last year, with our farmer partners and ingredient suppliers have been around climate change. The increasing difficulty in growing a crop thats already sensitive to a thousand climate factors along with being labour intensive, means what exactly for all of us in that ecosystem?
There’s so much behind each bar of chocolate - from genetics, to pollination practices, cultural traditions and geographic indicators; a whole history of its own. - are we ready to really truly understand cacao?
Or will cacao disappear because we fail to fully recognise and support the farmers behind chocolate, rapidly switching to rubber and other rewarding crops?
Heres to another year of telling stories about, understanding and celebrating Indian cacao with fervour. Because we're only just scratching the surface and most of us are still eating something thats often dubbed as chocolate but is in reality just something in a plastic packet.
