Kailash Temple, Ellora
Although the Ellora and Ajanta outfits are truly prodigious, I think the gold medal goes to the Temple of Kailash.
It is a 7th century monastery roughly carved into the rock, from the roof to the base. You have read correctly, yes: excavated, with all its details, columns, figures and ornaments. A true architectural feat and a must see on a trip to India.
