- 2 cups basmati rice
- 500 grams mutton, cut into pieces
- 1 cup plain yogurt
- 2 medium-sized onions, thinly sliced
- 2 tomatoes, chopped
- 4 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 2 green chilies, slit lengthwise
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons biryani masala powder
- 1 teaspoon garam masala powder
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- A pinch of saffron strands (optional)
- 1/4 cup warm milk (optional)
- 4 tablespoons ghee (clarified butter) or vegetable oil
- Salt to taste

โช๏ธIn a bowl, combine the mutton pieces with the ingredients listed under the marinade.
โช๏ธMix well to coat the mutton pieces evenly.
โช๏ธCover the bowl and let the mutton marinate for at least 1 hour, preferably overnight in the refrigerator.

โช๏ธWash the basmati rice under running water until the water runs clear.
โช๏ธSoak the rice in water for 30 minutes, then drain it.
โช๏ธIn a large pot, bring water to a boil and add salt.
โช๏ธAdd the soaked and drained rice to the boiling water.
โช๏ธCook the rice until it is 70-80% done (slightly undercooked). This will take about 5-7 minutes.
โช๏ธDrain the rice and set it aside.

โช๏ธHeat ghee or vegetable oil in a large, heavy-bottomed pan or pressure cooker.
โช๏ธAdd the sliced onions and sautรฉ until golden brown.
โช๏ธAdd the minced garlic, grated ginger, and green chilies. Sautรฉ for a minute until fragrant.
โช๏ธAdd the marinated mutton pieces to the pan and cook on medium-high heat until they are browned on all sides.
โช๏ธAdd the chopped tomatoes and cook until they turn soft and mushy.
โช๏ธAdd the red chili powder, turmeric powder, biryani masala powder, and salt. Mix well to coat the mutton with the spices.
โช๏ธLower the heat, cover the pan, and let the mutton cook until tender. If using a pressure cooker, cook for about 20-25 minutes or as per the cooker's instructions.

โช๏ธPreheat your oven to 350ยฐF (180ยฐC) if you're using the oven method for dum cooking. Alternatively, you can use a stovetop method.
โช๏ธIn a large, oven-safe dish or a heavy-bottomed pan, spread a layer of cooked rice evenly.
โช๏ธSpread half of the cooked mutton over the rice layer.
โช๏ธSprinkle half of the chopped mint leaves and coriander leaves over the mutton.
โช๏ธRepeat the layers with the remaining rice, mutton, mint leaves, and coriander leaves.
โช๏ธIf using saffron, soak the saffron strands in warm milk for a few minutes. Drizzle this saffron milk over the top layer of rice. Alternatively, you can also use yellow food coloring.
โช๏ธCover the dish with a tight-fitting lid or foil to seal it.
โช๏ธPlace the dish in the preheated oven and cook for about 20-25 minutes, or place it on a stovetop over low heat for about 30 minutes. This allows the flavors to meld together and the rice to fully cook.
โช๏ธRemove from heat and let it rest for 5-10 minutes before opening the lid.
