- 2 cups basmati rice
- 500 grams mutton, cut into pieces
- 1 cup plain yogurt
- 2 medium-sized onions, thinly sliced
- 2 tomatoes, chopped
- 4 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 2 green chilies, slit lengthwise
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons biryani masala powder
- 1 teaspoon garam masala powder
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- A pinch of saffron strands (optional)
- 1/4 cup warm milk (optional)
- 4 tablespoons ghee (clarified butter) or vegetable oil
- Salt to taste

โ–ช๏ธIn a bowl, combine the mutton pieces with the ingredients listed under the marinade.

โ–ช๏ธAdd the soaked and drained rice to the boiling water.

โ–ช๏ธCook the rice until it is 70-80% done (slightly undercooked). This will take about 5-7 minutes.

โ–ช๏ธDrain the rice and set it aside.

โ–ช๏ธAdd the minced garlic, grated ginger, and green chilies. Sautรฉ for a minute until fragrant.

โ–ช๏ธAdd the marinated mutton pieces to the pan and cook on medium-high heat until they are browned on all sides.

โ–ช๏ธAdd the chopped tomatoes and cook until they turn soft and mushy.

โ–ช๏ธAdd the red chili powder, turmeric powder, biryani masala powder, and salt. Mix well to coat the mutton with the spices.

โ–ช๏ธLower the heat, cover the pan, and let the mutton cook until tender. If using a pressure cooker, cook for about 20-25 minutes or as per the cooker's instructions.

โ–ช๏ธSpread half of the cooked mutton over the rice layer.

โ–ช๏ธSprinkle half of the chopped mint leaves and coriander leaves over the mutton.

โ–ช๏ธRepeat the layers with the remaining rice, mutton, mint leaves, and coriander leaves.

โ–ช๏ธIf using saffron, soak the saffron strands in warm milk for a few minutes. Drizzle this saffron milk over the top layer of rice. Alternatively, you can also use yellow food coloring.

โ–ช๏ธCover the dish with a tight-fitting lid or foil to seal it.

โ–ช๏ธPlace the dish in the preheated oven and cook for about 20-25 minutes, or place it on a stovetop over low heat for about 30 minutes. This allows the flavors to meld together and the rice to fully cook.

โ–ช๏ธRemove from heat and let it rest for 5-10 minutes before opening the lid.
