Wood Fired Oven: A long and steady 🔥 🔥 Around 7 hours of burn, brings the dome from 100 to around 500 degrees celsius. By then the black soot stuck on the dome and surface of the oven are completely burnt to ashes! The ashes are raked out and the hearth mopped clean. The oven is closed and left to equalise the soaked heat for about 24 hours. The next day, the oven is ready at about 245 c; the temperature to bake batches of breads and then, cakes and cookies as the temperature of the oven falls.

All of the grain is in the loaf. Meaning it is not only made with 100% whole wheat flour but no part of the grain is sifted out! 100% extraction flour = all of the grain is in the flour.
