Serves 4

A) Ingredients:

For the rice: -1 1/2 cups basmati rice
-2 cloves
-2 green cardamoms
-1 cinnamon stick
-1 bay leaf
-3 cups water (more for soaking)
-1 tsp lemon juice
-salt to taste

For the vegetable masala -2 tbsp ghee
-1/4 tsp black cumin (shah zeera)
-2 green cardamoms
-2 cloves
-1/2 cinnamon
-1 large onion, finely sliced
-1 tsp ginger-garlic paste
-1/3 cup whisked yogurt
-1/2 tsp red chilli powder
-1 tsp coriander powder
-1/2 tsp garam masala powder
-2 cups chopped mixed veggies such as potato, carrot, cauliflower, corn, green beans, capsicum and peas
-Salt to taste
-Water as needed

To garnish -Pinch of saffron
-1/4 cup hot milk
-1 tbsp ghee
-A tsp of kewra water
-1 large onion, finely sliced, fried golden and crushed
-1/4 cup chopped mint & coriander leaves
-2 tbsp fried almonds & raisins
-2 tbsp butter
