Using turf or peat to dry out barley has been a tradition in Ireland and Scotland since the Irish monks invented uisce beatha. In the 1800 most big Irish distilleries moved to the city's and the tradition of using peat died in Ireland. In the Islay region of Scotland the tradition has carried on, with the octomore range being the most heavily peated in the world.

Single potstill. A style of whiskey unique to the Irish born through tax evasion. This style of whiskey uses both raw and malted barley, and is then triple distilled in copper pots. Those two things give it a creaminess like no other style of whiskey.
