Two years in the making ❄️

I first attempted these royal icing transfers a couple of years ago, and they just never came together the way I had hoped. After the big snow here in the Carolinas last week, and Bella insisting on making snow angels, I was reminded of this design and decided it was finally time to try again and see it through.

I am so glad I did.

There is something so sweet about these cookies. The transfers take extra time and a whole lot of patience, but seeing it all come together is always worth it.

✨Spumoni Cookies ✨🤍❤️💚

These cookies were truly a labor of love. After years of making spumoni-inspired bakes that never quite hit the mark, I set out to create my own version—and these small-batch beauties delivered!

Each dough was thoughtfully crafted:
• Vanilla dough
• Chocolate dough enhanced with espresso powder and Dutch-process cocoa
• Pistachio dough with chopped pistachios and pistachio paste
• And the real differentiator—a cherry dough, made with dried cherry powder and dried cherries rehydrated in marasca cherry syrup 🍒

The cherries add depth and brightness that finally make this cookie sing. Each dough was carefully pressed together to create that signature spumoni look—and every step was worth it.
