On Monday, 15 June, Pharaoh opens the door to the hills of Valsamoggia. We are hosting Orsi Vigneto San Vito, a biodynamic farm and winery just outside Bologna, where vineyards, vegetables, cereals, and Mora Romagnola pigs coexist as part of the same living ecosystem. No irrigation, no selected yeasts, no filtration - just spontaneous fermentations and wines shaped entirely by place, season, and instinct.

For Federico Orsi, wine is simply one expression of agriculture. The farm operates as a complete cycle, where soil, food, and wine are inseparable, each influencing the other.

Joining us in Athens is Federico Orsi .vito - winemaker, farmer, and the driving force behind the estate. Alongside his work in the vineyard, Federico is also a partner at the excellent bistro Ahimè (Michelin Bib Gourmand) and its sister restaurant, Uno Di Questi Giorni, in Bologna, extending the same philosophy of seasonality, farming, and close collaboration with producers into hospitality.

Orsi’s wines are imported to Greece by Kala Krasia .krasia.tinos - the company of fellow winemaker Jerome Binda of Kalathas in Tinos, whose own work is rooted in the preservation of indigenous varieties and a deep respect for place and agricultural heritage.
