Cheese and apricot sandwich! An amazing, delicious, nutritious take on an original!
Ingredients:
Shredded Rotisserie Chicken
Lettuce Leaves
Sourdough Bread Slices
Dried Apricots
Sour Cream
Mayonnaise
Sliced Tomatoes
Honey
Mustard
Method:
Lay apart the bread slices, tomato and lettuce leaves. Take the remaining ingredients in this list and mix them well. Layer the mix on the bread slices and top them with tomato slices. Cover with lettuce on top and close off the sandwich with the remaining bread slices. Press firmly, cut diagonally and serve with a dash of crisps and fruit.

Club sandwich! Perfect for kids! Edit meat/veg ratio accordingly to make this meal more healthy/ protein packed.
Ingredients:
Thin strips of smoked bacon
Slices of whole wheat bread
Grated carrots
Sliced tomatoes
Sliced cucumbers
Soft cheese
Method:
Spread out slices of whole wheat bread on a platter and top them with bacon. Make sure you’ve grilled the bacon for five minutes (alternating sides in between) and removed the crust portions of those bread slices. Mix the cheese and carrots and lay on top of those slices of bread. Now, add tomatoes to the other slices along with cucumber and top them with cheese. Add slices of smoked bacon to the remaining slices of bread and cover up the with the rest.

Chicken salad sandwich! Serves 2

Ingredients:
3/4 cup chopped cooked chicken or turkey
1 medium stalk celery, chopped (1/2 cup)
1 small onion, finely chopped (1/4 cup)
1/4 cup mayonnaise or salad dressing
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices bread
Method:
Combine the chicken, celery onion and mayonnaise and spread over 2 slices of bread. Top with salt and pepper then finish with the remaining slices of bread, cut in half, pack and enjoy!
Pack with some crisps and berries and you’re good to go!
