Nobody warned you. What you were giving up.
Not properly.
People said it would be hard. People said the hours were long. People said you’d need to be passionate about it to make it work.
Nobody sat you down and told you what you were actually walking away from the day you took those keys.
The version of yourself that existed before.
The one who could switch off at seven o’clock on a Tuesday and mean it. The one who could sit in someone else’s pub and just be a customer, without clocking the rota gaps and the GP margin on the specials board and whether the bar staff are upselling or just taking the order. The one who could go on holiday and actually leave. Not leave while mentally running through whether the cellar was stocked before you got in the taxi, not leave while checking the till reports from an airport lounge. Actually leave.
That person is still in there somewhere. They just haven’t had a full night’s sleep since the boiler broke in February.
You gave up weekends. Not some weekends. The concept of weekends as something that belongs to you. Friday night and Saturday night are your busiest shifts. Sunday night after lunch service is either prep or recovery or both. The rest of the world is doing its weekend thing and you are doing yours, which looks completely different and pays considerably less than most people assume.
You gave up Christmases. Or at least the version of Christmas where you were the one sitting down. You’ve spent more than one December 25th behind a bar making sure other people had somewhere warm and welcoming to be, and you told yourself it was fine, and mostly it was, and occasionally, quietly, it wasn’t.
You gave up the relationships that took the weight of it without ever complaining. The conversations that got postponed because service was busy and then it was too late and then it was the next day and there was always something else. The events you missed. The things you meant to be there for. The people who stopped asking after a while because they already knew the answer.
You gave up the ability to have a bad day privately. When the delivery didn’t arrive, the kitchen is two people down, the cellar flooded at eleven on a Wednesday night and the card machine is playing up during the lunch rush, you still have to walk out front and be exactly who the room needs you to be. Warm. Present. Glad they came in. Because the bar doesn’t know you’re having a bad day, and it wouldn’t care if it did, and the regulars came in because this is their respite from their bad days, not yours.
You gave up the quiet evenings that other people take for granted. The ones where nothing needs doing and nowhere needs to be and the evening is just an evening. Those exist in other lives. In your life the evening is a service, or the prep for the next one, or the moment you finally sit down at half eleven and try to remember if you ate today.
And somewhere along the way, without quite noticing when it happened, the pub stopped being the thing you ran and started being the thing you are.
Not the building. Not the business. The thing. The community around it, the regulars who belong to it, the rhythm of it, the way it feels when the room fills up on a night when you thought it might be quiet and suddenly it’s exactly what it’s supposed to be.
That’s not a complaint. It never was.
It’s just the truth of it. The part that doesn’t make it into the business plan or the lease agreement or the conversation with the bank manager about projections. The part that only another operator actually understands when you try to explain it to someone who hasn’t done it.
And it’s also why, when a regular tells you this is the only place they feel like themselves, or a wake turns into a celebration because that’s what the room needed and the room knew it before anyone said a word, or a quiet Tuesday becomes something nobody planned and everybody remembers for reasons nobody can quite explain: it means what it means.
Because you know what it cost.
Not just in money. In years. In the version of yourself you traded for the version standing behind that bar.
And most days, not every day, but most, it was worth it.
