Japanese tagine style cooking with the pot called tohban.

I simply placed leek, carrot, parsnip, onion and salmon. Poured some sake and light soy sauce and cooked with the lid. They are cooked mainly on their own moisture.

So simple and delicious!
I garnished the salmon with some chopped spring onions.

Mid-week Japanese dinner.

I bought a big mackerel at Sheffield market. I just grilled it with plenty of rock salt. I usually grate mooli for it but instead I grated radish thus pink colour.

At the market I also bought a cuttlefish. I sorted it out last night but kept a small piece for sashimi. Cattle fish is good for sashimi as it is thick but not chewy.

Others on the table are:

Salmon sashimi

Sweet and sour marinated Jerusalem artichoke

Shungiku salad with sesame seeds

Vegetable soup

Multi-grain rice

And white wine 🥂
