Another incredible benefit of Alfalfa sprouts is its ability to help lower cholesterol
One of the first studies conducted in Europe in the 1990s over a 6-week period found that the average reduction in ‘bad’ or LDL cholesterol was by 16.6% while at the same time, the ‘good’ or HDL cholesterol spiked up by 11.2%. Another study conducted in 2016 on a group of 15 people gave similar results with ‘bad’ cholesterol reducing by 18%.
This effect is attributed to its high content of saponins.
What are saponins?
Saponins are plant compounds that are known to lower cholesterol levels. They do this by binding with cholesterol and increasing its excretion, which otherwise would be absorbed by the body. This is also precisely how many cholesterol-lowering drugs work.
The human studies done so far are too small to be conclusive, but the results are definitely promising!

Does your food choice on Monday affect what you’ll eat for the rest of the week?
May be!
I’ve read somewhere that starting your week off with a healthy meal can set you off on a healthier diet for the rest of the week. I decided to “make” my own baguette today. May be “making” is not the right word as I bought a part baked baguette from the supermarket and baked it in the oven for about 10 minutes. 😅
For the fillings, I used:
Hummus
Yellow peppers
Avocado
Artichokes
Basil
And added a generous amounts of Sproutd Sulforaphane
The end result is a crispy crust with a soft bread with delicious and healthy fillings inside. 😋😋
