Pastichio - Ingredients:1 packet of thick macaroni for pasticcio1 1/2 kg ground beef50g olive oil2 onions4 cloves of garlic2 large carrots1/2 bunch of parsley2 bay leaves1 cinnamon stickSalt, pepper, nutmeg (2 tsp each)2 tsp sugar2 tbsp tomato paste600g tomato sauce or crushed ripe tomatoes1 glass of red wine300g beef brothFor the béchamel sauce:3 egg yolks1 whole egg200g butter200g flour2 liters of whole milkSalt, pepper, nutmeg150g kefalotyri cheese50g kefalograviera or Parmesan cheeseMethod:1. In hot oil, sauté the onions, carrots, and garlic until they become translucent.2. Add the ground beef in batches, along with the bay leaves, cinnamon stick, salt, pepper, and nutmeg. Sauté until the beef turns golden brown.3. Add the tomato paste and sauté for two minutes. Then add 2 tsp of sugar.4. Deglaze with red wine, and after two minutes, add the tomato sauce and beef broth. Taste and adjust with salt or pepper if needed. Cook for 30 minutes over low heat.5. Melt the butter and add the flour. Cook until the flour loses its raw smell.6. Gradually pour in the warm milk, stirring constantly, until the béchamel sauce thickens and becomes smooth. Once it starts to bubble and the sauce has thickened, it is ready.7. Add a little salt, pepper, nutmeg, the three egg yolks, one whole egg, and the grated cheeses to the béchamel sauce. Mix until the sauce becomes velvety.8. Boil the macaroni and mix with three spoonfuls of béchamel sauce. Arrange the macaroni in a baking dish.9. Pour the meat sauce over the macaroni.10. Pour the béchamel sauce on top, and finally, sprinkle some kefalotyri cheese and kefalograviera or Parmesan cheese, or even breadcrumbs if desired.11.
