Pumpkin power! 🎃
Did you know that pumpkin isn’t just packed with vitamins and minerals, but it’s also a low-calorie champ? Only 28 kcal per 100g! 🙌
We’ve got the perfect fall recipe for you — a pumpkin spinach salad 🥗✨
What you’ll need:
· 600g fresh pumpkin 🍂 (cut into 3 cm cubes)
· 1/2 tbsp olive oil 🫒
· salt and pepper 🧂
· 35g walnuts 🌰
· 150g spinach leaves 🌿
· 60g feta 🧀
For the dressing:
· 50ml olive oil 🫒
· 2 tbsp balsamic vinegar 🍇
· 1 tbsp honey 🍯
· salt and pepper 🧂
How to make it:
1️⃣ Preheat the oven to 200°C. Toss pumpkin cubes with olive oil, salt, and pepper. Roast for 20 minutes.
2️⃣ Flip the pumpkin pieces and roast for another 7–10 minutes until golden.
3️⃣ While the pumpkin cools, whip up the dressing: mix olive oil, balsamic vinegar, honey, salt, and pepper.
4️⃣ Layer spinach on a plate, drizzle with some dressing, then add crumbled feta and chopped walnuts.
5️⃣ Toss in the cooled pumpkin and gently mix to distribute all the goodies.
6️⃣ Serve, drizzle with the rest of the dressing, and enjoy! 🍽️
