Cooked a roast chicken with garlic & lemon earlier this week. Mini roast. Few tidbits for the dogs. A whole chicken has so many uses after Sunday. Strip for sandwiches or salads. Simmer the carcass with herbs to render stock (I freeze it in ice cube trays for instant stock) Nice wee salad with olives, baby spinach, plum tomatoes, beetroot & fries.
