If you’ve ever wondered who’s behind the Peruvian, meet Carlo, THE Peruvian himself and the guy who decided that Edinburgh definitely needed more crispy pork belly, saucy Lomo Saltado and fries drowning in aji verde. And honestly? He was right.

Born in Peru, Carlo grew up with big flavours, bold spices, and proper street food.
So when he moved to Scotland and couldn’t find the real deal, he made it himself. Fast forward to today and he’s bringing authentic Peruvian food to , serving up the dishes he grew up eating.

Oh and when he’s not running the show here, you’ll find him pouring some of the best Pisco Sours in town. 🍸
