When life's rubbish, make a roly poly!I

Jam Roly Poly | Serves 6

200g Self-Raising Flour
100g Suet
50g Caster Sugar
1 tsp Baking Powder
1 tsp Vanilla Extract
Zest of a lemon
A pinch of salt
100ml Milk
100g (or more) Strawberry Jam

What to do:

Mix together all the ingredients except the jam.

The dough will be sticky, so dust plenty of flour on top of a layer of parchment paper and foil bigger than an A4 sized-paper (check video). Place the dough in the middle and dust with more flour. Place another layer of parchment paper on top of the dough and start rolling out the dough (check video for reference). Take the paper off once you've got the desired shape.

Spread a liberal layer of jam and roll into a log. Gather the parchment and foil around and seal.

Place a grill on top of a tray. Put the roly poly on t1he grill. Place in the oven and fill the tray with boiling water. Carefully push it into the oven to bake for 30-40mins at 180C /160C fan. Serve with custard.
