🌱VEGGIE NOODLE SOUP WITH WHITE BEANS
Delicious, wholesome and quick to make
INGREDIENTS:
•Onion
•Courgette
•Red bell pepper
•2 cloves of garlic
•Jar of white beans
•Tomato purée
•Whole wheat noodles
•herbs + seasoning: oregano, basil, marjoram, pinch of cayenne pepper, salt, black pepper
Crush the garlic, chop the onion, cut the courgette and red pepper.
Put everything in the saucepan at the same time with fat of your choice, I used ghee. Fry for 10 minutes. Add herbs and tomato pure, fry for further 2 minutes ( be generous with herbs, that's where the flavour is.).
Pour about 1 litre of boiling water, it depends on how thick you want the soup to be. Feel free to add more if you like.
Add the drained beans and leave it to boil for 10 min on low gas uncovered for some water to evaporate.
Season with salt, cayenne pepper & black pepper.
At the noodles, look at the portion suggested on the packaging. Cover the saucepan and switch off the gas.
Leave it on the side for further 5-10 min for the noodles to soak in some of the liquid. No need to cook the noodles. Sprinkle with some parsley leaves and enjoy🌱
NOTES:
For a quick soup I always put everything in at the same time, even the fat. The flavour will be there and there is no need to preheat and often burn the fat before you add anything else.
I often use broth as a base ( chicken, duck), always cook some at the weekend and keep it in the fridge.
I had some leftover chunky ham which I also added here.
Feel free to experiment, use tinned tomatoes, different veggies, beans. It will work out at the end .

🌱6 ingredients PASTA with ham & courgette 🌱
Real quick and tasty lunch/supper🌱
INGREDIENTS:
1 onion
2 cloves of garlic
100g wholewheat pasta
2 courgettes
100g Chunky ham
feta cheese
Cook the pasta.
Fry chopped onion using fat of your choice ( I use ghee), add crushed garlic, give it couple of minutes.
Add chopped courgette and fry for few minutes, add a dash of water and let it cook until the courgette starts to fall apart and turns into a sauce.
Add cut up ham and cooked pasta. Mixed it all gently adding salt and black pepper, sprinkle with some feta and enjoy 🌱
Serves 2
Feel free to exchange any of the ingredients for what you like.
