Dear Bertrand,

It’s been 14 years since we first met in 2012.

When I look back on my life in Paris and my journey as a chef, I realize that you have always been part of it.

To me, you are not only a great chef—you are a true friend.

And to so many chefs around the world, you are an inspiration.

How many young cooks came to Paris dreaming of working at Septime because of you?

How many chefs discovered a new way of thinking about food through your cooking?

How many restaurants were born because someone was inspired by your vision?

No one could ever count.

I am 45, and you are 44.

We belong to the same generation, and I truly believe you have helped redefine modern gastronomy. Through Septime, you didn’t just create one of the world’s great restaurants—you created a movement and inspired a generation of chefs.

I can’t count how many times I’ve eaten at Septime, been to Clamato, or shared a bottle at Cave Septime.

More importantly, I can’t count the moments we’ve shared together—with you, Manu, and all the wonderful friends around you.

We laughed, shared incredible wines, talked endlessly about food, family, life… and, of course, hip-hop. Somehow, our conversations always found their way back to music.

Those moments are among the most precious memories I have.

To me, those places were never just restaurants.

They felt like home.

What I admire most isn’t only the extraordinary chef you are.

It’s the extraordinary person you have always been.

I learned far more than cooking from you.

You taught me, through the way you live, how to respect people, how to build a restaurant with soul, and how to stay humble while inspiring an entire generation.

Thank you.

What you have built cannot be measured by Michelin stars or rankings.

Your true legacy is people.

The chefs whose lives you changed.

The young cooks you inspired.

The guests whose lives were touched around your table.

And I am proud to say that I am one of them.

Thank you for your friendship, your generosity, your inspiration, and for every unforgettable moment we have shared over these past fourteen years.
