🥬 Healthy Spinach & Veggie Sandwich 🥪✨
Looking for a nutritious, flavor-packed sandwich? Here’s my go-to recipe! Perfect for breakfast, lunch, or a quick snack.
🌱 Ingredients:
* Fresh spinach, chopped
* Mixed veggies: carrot, onion, capsicum, corn, garlic, green chili (coarsely ground)
* Ghee or butter
* Cottage cheese and mozzarella
* Spices: chili flakes, oregano, salt
* Multigrain bread
🥄 Method:
1. Chop fresh spinach and set aside.
2. In a grinder, coarsely grind carrot, onion, capsicum, corn, garlic, and green chili (use any veggies you like!).
3. Heat ghee or butter in a pan, and sauté the veggies until they soften.
4. Add the chopped spinach and cook together.
5. Stir in cottage cheese and a bit of mozzarella for that creamy texture.
6. Add chili flakes, oregano, and salt, and give it a good mix.
7. Cover the pan for about 2 minutes to let all the flavors blend.
8. Take multigrain bread, stuff it with this veggie filling, and grill it on a pan until golden.
9. Slice and enjoy your healthy, colorful spinach and veggie sandwich—perfect any time of day!
