Introduction to Harar Coffee
Harar coffee, a jewel of Ethiopia’s ancient coffee heritage, is celebrated as one of the oldest and most distinctive coffees in the world. Grown in the rugged highlands of eastern Ethiopia near the historic walled city of Harar—a UNESCO World Heritage Site—this coffee is deeply intertwined with the region’s cultural and spiritual identity. For centuries, Harar has been a hub of coffee trade and tradition, where the Harrari people perfected artisanal dry-processing methods that give the beans their signature wild, winey complexity and bold, fruity character.
Harar coffee is traditionally classified into three grades—Longberry, Shortberry, and Mocha—based on bean size and shape. Its dry-processed (natural) beans develop intense flavors of blueberry, dark chocolate, and spices, often accompanied by a lingering, almost fermented sweetness and a full-bodied, syrupy texture. These unique traits arise from the region’s arid climate, high-altitude terroir, and time-honored practices of sun-drying cherries on raised beds, allowing the fruit’s sugars to infuse the beans with their vibrant profile.
