Today was a cold rainy day in Madrid and yesterday I put a 24 hour chicken broth in the crockpot with no plan.
Potato leek soup popped in my head -
I had everything but leeks so I walked to the frutería and bought some leeks to make potato leek soup or vichyssoise - for the French.
I love making simple recipes with the best ingredients and putting the extra touch of love to elevate a dish
2 large leeks chopped
1 clove garlic
Butter
3 medium potatoes
1/3 cup cream (más o menos)
Chicken broth - hopefully homemade 🙏🏾
Toasted pumpkin seeds topping
Olive oil for topping

🚨🌿Herb Hack🌿🚨: To keep fresh herbs like rosemary and thyme vibrant all week, treat them like flowers — trim the ends and stand them in a small glass of water in the fridge. Cover loosely with a produce bag, and they’ll stay fresh twice as long. Microgreens? Store them with a dry paper towel on top to absorb moisture and prevent wilt.
