There's two main reasons:
✨It's highly unreactive
✨It's biocompatible
Using gold for a dry (rather than wet) ECG electrode means that the electrode has a longer shelf life, and can even be sanitized for longer-term use.

FHEs:
💧Traces printed with conductive ink
✔️Thinner and more flexible than traditional PCBs, low-cost for small production runs

⚠️Requires subtractive manufacturing to create conductive traces, which wastes material and causes excess pollution
