Super easy Strawberry Rhubarb Oat Bars. Takes minutes to whip together and were devoured in a blink by the whole family.

Recipe:

Compote:
3 cups of your favourite fruit. I used a mix of chopped rhubarb and strawberries
1/2 cup of sugar (can use less if you have sweeter fruit or just want it less sweet)
1 tsp vanilla
Zest and juice of a lemon.
1 TBSP Cornstarch to thicken

Combine all ingredients in a pot and simmer or low until all fruits are tender and it resembles a jam consistency. Make sure to stir constantly for the first few minutes to prevent lumps by the cornstarch. Set aside.

Crust/Topping
1 3/4 cup all purpose flour
1 1/2 cup quick oats
1 cup brown sugar
Pinch of salt
3/4 tsp baking powder
1 cup butter (softened)

Combine all ingredients in a bowl until the butter is worked through and mixture is wet-sand like. Divide in half and press half into a parchment lined 8x8 pan.

Bake at 350F for 10 mins. Remove and add the compote. Crumble the remaining topping over the compote and bake for 30-35 mins (keep an eye on it)

Let cool, enjoy!!!!
