As part of the Visa Infinite Dining Series, Five Sails Culinary Director Chef Alex Kim joined Chef Chanthy Yen and the team at Touk for an exclusive evening where Cambodian flavours met the Pacific Northwest through a thoughtfully curated multi-course menu.

The Altitude: BC Spring is designed as a climb, beginning at the coast with bright, clean flavours from the Pacific, then moving inland into deeper, warmer, and more grounded dishes inspired by BC’s valleys, forests, and alpine regions.
Inspired by Chef Alex Kim’s travels through Peru, where ingredients and cooking techniques shift with elevation, this menu brings that same perspective home. Each course reflects a different part of the province, not just in ingredients, but in how it’s prepared, how it evolves, and how it feels throughout the evening.
