These Chocolate Coconut Snowball Bites taste like a little homemade candy shop treat — creamy coconut inside, glossy chocolate outside, and no oven needed. Simple, sweet, and impossible to stop at one.
Creamy coconut center, glossy chocolate shell, no baking. Perfect for Mini Bites.
Ingredients
2 cups shredded coconut
1 cup sweetened condensed milk
1/2 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups dark or semi-sweet chocolate chips
1 tsp coconut oil
Extra shredded coconut for topping
Directions
Mix the shredded coconut, condensed milk, powdered sugar, and vanilla in a bowl until you get a thick, sticky mixture.
Shape into small balls using your hands. Place them on a tray lined with parchment paper.
Freeze for 20–30 minutes. This helps them stay firm when dipped in chocolate.
Melt the chocolate chips with coconut oil in the microwave in 20-second intervals, stirring each time until smooth.
Dip each coconut ball into the melted chocolate. Let the excess drip off, then place back on the parchment paper.
Sprinkle extra coconut on top before the chocolate sets.
Chill for 15–20 minutes, or until the chocolate shell is firm.
Mini Bites Tip
For a cleaner, firmer center, freeze the coconut balls before dipping. For a softer, creamier bite, keep them in the fridge after coating.
