The cacio and the pepe. “Cacio” is kind of a non specific word for cheese but it’s pecorino cheese that’s commonly used (FYI pecora means sheep in Italian) “Pepe” means black pepper. She’s molto humble, yet molto delizioso. The devil, like most simple dishes, is in the details.

We start with this glorious porchetta which is cured, slathered in garlic and spices, then slow and low roasted for 4 hours. Then we slice that tasty thing up and we make-a the pizza! It’s our best pizza yet.
