Nous collaborons depuis plusieurs années avec Acadian Sturgeon. Il est essentiel pour nous de mettre en valeur l’ensemble du produit, et non seulement le caviar. Dans ce plat, la chair riche et fumée de l’esturgeon s’harmonise avec les saveurs iodées et légèrement sucrées du homard, relevées par l’acidité et les notes terreuses des shiitakes marinés.

We have been collaborating with Acadian Sturgeon for several years. For us, it is essential to highlight the entire product, not just the caviar. In this dish, the rich, smoky flesh of the sturgeon harmonizes beautifully with the briny, subtly sweet flavors of lobster, enhanced by the acidity and earthy notes of the marinated shiitakes.
