Yesterday I posted my meal plan for the week; on the menu today was Instant Pot Chicken Souvlaki Rice. Let me just say, this dish immediately claimed a spot on my repeat dinner rotation meals. Oh, it's good. And EASY! It takes 30 minutes to make, and is hardly any effort to prepare. Posting the recipe on my website, so make sure you go check it out!

On a piece of toast, spread 1 laughing cow cheese. Slice half a ripe avocado and place on top. Fry an egg to desired doneness and place that on top of avocado. In a small bowl quarter some cherry tomatoes, season with a drizzle of evoo, salt, and pepper and scoop over egg. To finish, drizzle with balsamic vinegar reduction. Protein, healthy carbs, and healthy fats.

Just a look into some of my weekly meal plans!

How many of you plan your dinners in advance?
(meal planning, not to be confused with meal prepping.)

If you don't meal plan, I highly suggest it! I cannot tell you what a relief it is to already have a dinner plan for the week instead of having to worry or rack your brain every day trying to figure out what to make for supper. Not only that but not going to the grocery store everyday will save you money in the long run; when you only have to go once (maybe twice) in a week, you aren't tempted to add a few more things into your cart every time you go.

A few tips to make meal planning easier:
1. Pinterest; SO many wonderful recipes to choose from
2. If you can swing it; meal plan and grocery shop on a Monday. Stores are WAY less busier and shelves have been fully restocked. (have you ever gone to Superstore during the weekend? Hi, it's a nightmare.) If you have to go during the weekend, try going early in the morning before it gets too busy and stuff runs out.
3. Plan your meals using a bunch of the same ingredients, ie; doing multiple recipes using bell peppers so when you buy a bag of bell peppers, you only have to buy them once but they'll definitely get used; less waste, less money spent having to buy a huge variety of things.
4. Use the ingredients from your dinner recipes to plan your lunches as well.
5. Only plan for the amount of days you know you'll need to make dinner; for example, I leave a lot of my weekends free for leftover days or days to go out for dinner.

Meal planning can be intimidating at first but trust me, it doesn't take long before you get the hang of it, build a routine around it and live your life by it. πŸ˜‹
