Feast your eyes on these beautiful Elm oyster mushrooms!

Aka Hypsizygus ulmarius, white elm mushrooms or Shirotamogitake in Japanese. Typically found on elm trees but can also be seen on other hardwoods.

They are larger than other oyster mushrooms and range in color from white to buff, cream, or tan, depending on their substrate and environment. Elm oyster mushrooms have many health benefits including: boosting the immune system, reducing inflammation, lowering cholesterol, regulating blood sugar levels and are rich in antioxidants.

New crop is set for fruiting. Should be ready to harvest in 2 weeks 🍄

The next superfood: Lion's Mane mushrooms
also known as Hericium erinaceus, hou tou gu or yamabush*take.

I'm sure you've seen these in powder/dehydrated or capsule form.
But have you ever seen these beauty up close???
