What have you been eating these days? This is ME! First meal of the day. It is nutrition, but not the right kind. This new struggle is real. Anyone else feeling it?

WHITE CHOCOLATE MATCHA PISTACHIO BLUEBERRY YOGURT BALLS
Clean, creamy, lightly sweet with a little crunch.

INGREDIENTS
- 1 cup thick plain Greek yogurt (I used coconut yogurt)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1–1½ tsp matcha powder
- ½ cup fresh blueberries
- â…“ cup finely chopped pistachios
- ¾ cup white chocolate, melted

Mix
In a bowl, whisk yogourt, maple syrup, vanilla.
Fold
Gently fold in blueberries and the pistachios.
Freeze
For an hour, than scoop portions onto a parchment-lined tray.
Freeze 2–3 hours, until solid.
Dip
Frozen balls into melted white chocolate and matcha.
Let excess drip off, place back on lined tray. Chill long enough to let chocolate firm up .. and then dive it. Store them in the freezer 🤗

So here is a little something I learned recently.. just stick your whole piece of ginger root right in the freezer. No more shriveled up gingerroot on the counter or in the fridge. Shreds nice!
