Twenty years in, Terroir Symposium still knows how to fill a room.

From a bison butchery workshop in Edmonton to a four-chef collaborative dinner at The Wilde on 27 in Calgary, the 2026 edition celebrated the joy of food the way it should be — loud, generous and deeply human.

Chefs, farmers, producers and storytellers from across Canada and around the world gathered to eat, think and talk about what food means right now and in the future.
