Celebrate National Soup Month with a Crispy Twist: Breaded Sole in Veggie Broth! 🥣✨🐟

🕒Prep Time: 10-15 minutes
🍳 Cook Time: 50 minutes
👩‍🍳Serves a family of 4

Ingredients:
• 2–4 pieces of Toppits Gluten-Free Breaded Lemon Pepper Sole fillets, baked & sliced
• 4 cups veggie broth
• 1 tbsp olive oil
• ½ onion, minced
• 1 carrot, shredded
• 1 cup mixed veggies (peas and potatoes)
• Salt & pepper

Preparation:
1️⃣Pre-heat oven to 205 °C (400°F). Bake the breaded sole for 20-25 minutes on a parchment-lined baking sheet. Turn the fillets over after 10 minutes, and cut them into cubes.
2️⃣Sauté onions, carrots, peas, & potatoes in olive oil until soft.
3️⃣Add broth & mixed veggies. Simmer 10–15 mins.
4️⃣Salt and pepper to taste.
5️⃣Serve soup in bowls, top with diced Toppits Breaded Sole.

💡 Pro tip: Keep the fish crispy by adding it after the soup is served!
