First day of Autumn already, soup season is coming.

I love leftovers, today was roast chicken.
So I made Chicken soup with spaghetti cut into noodles.

Spaghetti has been popular over the summer mainly with seafood, pesto or simple fry up of summer vegetables, cherry tomatoes, zucchini, asparagus.

Coming into the cooler months cut into whatever size you like for soups dishes.. but for the love of god don't cut in half. 😆

December was definitely Pasta al Forno month. Sadly it's coming to an end.

Have to say our 16 piece Christmas Lasagna was one of my best.

Not sure if my market people appreciated our traditional Lasagna with egg & ham this month. It's more of a Southetn Italy tradition, not béchamel. Not sure what region uses béchamel but they can have it.

Spinach & Ricotta Cannelloni made a come back too this month, its been a while.

Also Veggie Ragù lasagna with Spinach was delicious, a nice change from bolognese. Should make it more often.
