A Sri Lankan pastry Chef in Melbourne’s iconic Pelligrini’s Bar. Who would have thought? Daya Perera has been in the industry for 55 years, and 45 of those in Australia. He was Head Chef at Colombo’s Galle Face Hotel at one time. Now he makes the amazing Italian pastry at Pellegrini’s Bar, an icon since 1954.

What a week it’s been .. showing New Zealand radio personalities Jono & Ben our world. From tasting a sample of the 10,000 teas we taste every week, to inserting the Golden Tickets into packs of Dilmah Tea, the always effervescent Kiwis have been a joy to have around. Cricket at with the boys at Dunkeld Primary, Tea Inspired cuisine and climbing all the way up to the Upper Division of Dunkeld Estate.

The Dilmah Natural Luxury Sommelier Challenge made its international debut in Shanghai last week. 88 participating teams explored a fresh perspective on tea in the land where tea was first discovered nearly 5,000 years ago. The contest emphasizes the luxury that is a part of the influence of nature in crafting fine tea, the passion of the artisan, wellness in quality ingredients and more in a requiring respect for tea and other ingredients in the gastronomy and mixology that competitors are required to present. All were winners for their creativity, but two teams will visit the home of Dilmah, to continue their tea inspired adventure.
